Barbecue Chicken Pizza
I just have to say I was so amazed when I made this. I've used cauliflower before and it has never really tasted like dough. This was the first time I've made a crust that reminded me so much of pizza. This is going to be my go to weekend food and I cannot wait.
Ingredients:
1 1/4 cup of arrowroot flour
1/3 cup + 3 tbsp of coconut flour
1/2 cup warm water
1/2 cup olive oil
1 large egg
1 tsp sea salt
1 tsp oregano
1/2 tsp garlic salt
Topping I used for this pizza:
1 cup of cooked chicken
1/4 cup red onion
BBQ sauce (you can use any paleo approved bbq sauce you'd like)
2 scallions
After making this I wish I added BACON...definitely think it'd be amazing if you decide to add that
First add the arrowroot flour and coconut flour into a bowl. Make sure this is mixed very well. Next, you are going to add the oil, warm water, and whisked egg. You will notice the batter is very mushy and liquidy but don't worry. Lastly, add the spices, alter this depending on your preference. The last step will be to add the rest of the coconut flour and this will really depend. Slowly add in 1tbsp at a time, you should not need more than 3. The mixture you will end with is very sticky and does not form in a complete ball. Either use parchment paper or foil and line a pizza or flat pan. Place your mixture on the surface and using a spatula spread out in the shape of a circle. Don't worry too much about this step but try and get the batter as even as you can. Place in the oven at 450 degrees for 17-18 minutes, I like my crust very crispy! When I took this out I added all of my toppings and broiled the pizza for about 5 minutes. That's it, enjoy!
