Paleo Pancakes
Hey guys, so this is a recipe I've seen multiple times on many different sites. Everyone makes them a little differently but the overall base of the pancakes is the same, using bananas. I made two batches to make all of the pancakes pictured above. I was able to easily freeze half of them and microwave the rest when I was ready. Also, I made a fruit sauce that tasted absolutely amazing to put on top of these.
Pancakes:
2 bananas
4 eggs
1/2 tsp vanilla
1 tbsp cinnamon
Put all ingredients in a bowl and mix them together. The mixture will not be very thick. For these I left the bananas in small chucks because I liked the texture as they cooked. If you mix it up in a food processor or a blender you will get more of a crepe consistency, so make them based on your preference. I cooked these on a griddle and it was the quickest thing, I had these for the entire week. Place half in the fridge and the other half in the freezer and your good to go.
Fruit Sauce:
I took frozen fruit because that is what I had on hand to make these. If you prefer fresh fruit you can do that too but I'd suggest adding a little bit of water.
1/4 cup of blackberries
1/4 cup blueberries
1/4 cup strawberries
Place all of the fruit in a saucepan on high without any water. Let this sit for about 5 minutes as you will see the fruit start to melt down, when the fruit is very soft, take a fork and mash it all up. That's it! Let it cool and place in a container to store in the fridge. When you need it, take a scoop out and microwave.
