Mini Ice Cream Sanwiches


For this delicious treat I used the same recipe for my cocoa babies. It's a similar concoction but it's a treat that you freeze. When I bite into this, I swear to you, I thought I was eating a little chocolate peanut butter ice cream treat. If you have a sweet tooth like myself, you need these in your life!


Ingredients:

1 banana sliced
almond butter
mini cupcake liners(I used about 20)
enjoy chocolate chips
1 1/2 walnuts
1 tsp vanilla extract
1 cup of pitted dates
1/3 cup of vanilla extract

Directions for the cocoa batter:
First blend together the walnuts and salt. Next, I added the dates, vanilla, and cocoa power in the blender to make a smoother consistency. I actually added a few drops of water so the mixture wasn't too thick and much easier to place on the treats. I then transferred the mixture into a bowl and blended it together with a fork to make sure everything was mixed well.

Directions:
First get together mini cupcake lines and lay them out on a cookie sheet. Begin my scooping a small layer of almond butter on the bottom of these. Next, take your sliced up bananas and place one on each liner. The banana piece should cover the layer of almond butter. Lastly, you need to add your cocoa baby mixture on top. You may add enjoy chocolate chips to garnish this treat, that's up to you! Place in the freezer until they are completely formed. There you have it tasty delicious treats!
