Stawberry Chocolate Chip Walnut Muffins

Strawberry chocolate chip walnut muffins, yes I did just say all of that! These are the most perfect snacks for breakfast or really anything you'd like. These are fairly simple, and based on the types of fruit you like you can change this recipe easily.




Makes about 20 muffins

Ingredients:
4 bananas
4 eggs
8 pitted dates
4 tbsp almond butter
2 tsp of vanilla extract
6 tbsp coconut flour
1/4 tsp baking soda
1/4 tsp baking powder
1/2 cup diced strawberries (change to any fruit you'd like)
1/4 cup of walnuts
1/4 cup enjoy chocolate chips

Directions:
First, take the bananas, dates, eggs, vanilla and almond butter and mix together very well. You could use a food processor or a blender, whatever you have handy! Next, add in the coconut flour, baking powder, and baking soda. Continue to make sure the batter is very smooth and doesn't have chunks of the ingredients. Transfer this mixture to a bowl for the final ingredients. Lastly, add in the strawberries, walnuts, and chocolate chips with a spoon until they are nicely mixed throughout the batter.
Fill cupcake liners with the mixture 3/4 full. Bake in the oven at 350 for 25 minutes.
