YUM! Buffalo Chicken Meatloaf, this is a recipe I took off of Paleomg.com and let me tell you it’s amazing. I took the base of her recipe and tweaked it to my liking. I swear this is the easiest recipe to make and stick in the fridge and grab it as you go!
How I did it:
1 lb of chicken tenderloins (She said to to use ground chicken but I didn't like the texture, I used tenderloins and actually chopped them up super small!)
3 stalks of celery
1 large yellow onion
4 tbsp of hot sauce (can’t get enough of this, I actually drizzle some more on top right before it goes into the oven)
1 tsp paprika
1/2 tsp cumin
1/4 tsp red pepper flakes
1 egg
4 tbsp coconut flour
Put all the these ingredients into a bowl and mix together. The mixture looks kind gross like a light orange color. Put this into a loaf pan at 375 degrees for 25-30 minutes. Take it out of the oven and you have heaven.
