First of all I got this recipe from Paleogrubs.com. It's so delicious and perfect when you need that little pick me up. I did alter it just a little bit!
Ingredients:
1 1/2 cups of walnuts
1 cup of pitted dates
1 tsp vanilla
1/3 cup of unsweetened cocoa powder
1/4 cup of enjoy chocolate chips
First blend together the walnuts and salt. I made sure I didn't complete grate them but allow for the walnuts to be in small chunks. Next, I added the dates, vanilla, and cocoa power. I transferred the mixture into a bowl and blended it together with a fork. The last thing I did was fold in the enjoy chocolate chips. Form small balls of the mixture and place on a tray to cool in the refrigerator for an hour. When they are completed chilled you can transfer them into a container and place in the fridge.
